200g Fresh touken, cut into 3” X 1” slices
150g Shiitake mushroom
1 piece Broccoli florets
1 small pc Carrot, sliced
1/2 tbsp Ginger, minced
1 bowl Filtered water
1 tbsp Shoyu, The Bites
2 tbsp Sesame oil, Why Not?
1 tbsp Grape seed oil, Why Not?
1 tbsp Arrowroot Powder, The Bites (mix with 2 tbsp water)
Some sea salt, sugar and black pepper powder to taste
1. Add 1 tbsp of sesame oil and some sea salt to boiling water, blanch the broccoli. Drain and place around the plate.
2. Heat up a pan, add some grape seed oil, briefly pan fry the touken into golden colour, set aside.
3. Heat up the sesame oil, fry the ginger, add in the mushroom, carrot and water, braise for a while. Season and mix in the arrowroot powder mixture. Put in the pan-fried touken, gently combine it and simmer for a while. Dish up and put in center of the plate. Ready to serve.
