Mixed Berries Soy Yoghurt

Serves 2

Ingredients

1 cup/250ml Homemade soy yoghurt
2 cups Mixed berries (blueberries, strawberries, mulberries)
2 sticks Cherry spelt stick, Sonnentor

 

Method

1. Put 1 cup of washed mixed berries into a glass bowl. Cover and chill in fridge for an hour.
2. Pour half cup of the soy yoghurt over the chilled mixed berries and serve with the cherry spelt sticks.

 

Homemade Soy Yoghurt

Ingredients

900ml Soy milk, NaturGreen Soja Calcium
1 tsp Yogurt starter powder, Natren

 

Method

Heat the soy milk to 40°C in a stainless steel or clay pot with lid and remove from heat. Add 1 teaspoon of yoghurt starter and mix well. Cover with lid and let the soy milk ferment at room temperature for 12 to 14 hours.
Tips! To have a creamy and smooth texture, strain excess water from the soy yoghurt using a cloth strainer, then whisk the strained yogurt well until it becomes smooth.
